I am the CTO of a company that has been using one of your Ubuntu AMI Desktops for a while now. We have been very happy with the product, but it just came to my attention that we do not have the sudo password for the machine.
How can we get this please?

Please log in as the default user "ubuntu", then you can just type "sudo su" to become root. No password required.
By default ssh login for root is disabled. So for practical reasons there is no need for root user, although you could certainly set one after "sudo su" session.
